Thai Peanut Chicken Salad – colorful, fresh, and full of flavor! Carrots, green cabbage, red cabbage, bell peppers, green onion, and peanuts all tossed in a peanut dressing and topped with chicken. So delicious! Perfect for a healthy weeknight dinner in a pinch!

Who said salads have to be boring?! This Thai Peanut Chicken Salad could not be anymore colorful, fun, and delicious! It’s the kind of salad that makes you go back for seconds! It’s also super simple to make and makes for the perfect lunch leftovers! The peanut dressing is made with creamy peanut butter, soy sauce, rice wine vinegar, sesame oil, honey, lime juice, and garlic. That’s my kind of dressing! 

Ingredients for Thai Peanut Chicken Salad

Salad:

  • Shredded Carrots: Use 2 cups shredded carrots.
  • Green Cabbage: Adds a slight sweetness and peppery flavor. 
  • Red Cabbage: Used in addition to green cabbage for an even stronger peppery flavor.
  • Bell Peppers: I like to use a mix of red and yellow bell peppers for extra color!
  • Green Onion: Use 1/2 cup.
  • Peanuts: Use roasted and salted peanuts.

Peanut Dressing:

  • Creamy Peanut Butter: Use 1/2 cup creamy peanut butter. I like to use peanut butter made with just peanuts and salt.
  • Soy Sauce: I like to use reduced sodium soy sauce.
  • Rice Vinegar: Adds a subtle sweetness and tang to the dressing.
  • Sesame Oil: 1 teaspoon is used to add a toasted and nutty flavor to the dressing.
  • Honey: 2 tablespoons adds a subtle sweetness to the dressing.
  • Lime Juice: Use fresh lime juice.
  • Garlic: Use 4 cloves of freshly minced garlic for the best flavor!
  • Water: Used to thin dressing.
Chicken:
  • Chicken Breasts: 2lbs chicken breast that has been sliced in half lengthwise.
  • Olive Oil: A couple tablespoons to cook the chicken.
  • Salt and Pepper: To season the chicken.
 

Making the Peanut Dressing

This Peanut Dressing does not lack flavor! It is made by combining creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey, lime juice, honey, and garlic. It is perfectly creamy, nutty, sweet, and salty! So simple to make and so delicious!

Assembling Thai Peanut Chicken Salad

  • Slice the chicken breasts in half lengthwise. Season with salt and pepper.
  • In a large pan, heat a few tablespoons of olive oil over medium heat. Add chicken and cook for 5 minutes per side or until internal temperature reaches 165 degrees F. Remove from pan and set aside.
  • For the salad, add shredded cabbage, green cabbage, red cabbage, bell peppers, green onion, and peanuts to a large bowl.
  • To make the peanut dressing, whisk together creamy peanut butter, soy sauce, rice vinegar, sesame oil, honey, lime juice, and minced garlic.
  • Toss the salad with the dressing and top with sliced chicken.

Ingredients

  • Chicken:
  • 2lbs chicken breast, sliced in half lengthwise

  • 2 tablespoons olive oil

  • Salt and pepper

  • Salad:
  • 2 cups shredded carrots

  • 2 cups green cabbage, thinly sliced

  • 2 cups red cabbage, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 yellow pepper, thinly sliced

  • 1/2 cup green onion, sliced

  • 1/2 cup roasted and salted peanuts, chopped

  • Creamy Peanut Dressing:
  • 1/2 cup creamy peanut butter

  • 3 tbsp soy sauce

  • 2 tsp rice vinegar

  • 1 tsp sesame oil

  • 2 tbsp honey

  • Juice of 1 lime

  • 4 cloves garlic minced

  • 4 tbsp water

Directions
