Shrimp Scampi

This delicious Shrimp Scampi comes together in less than 30 minutes! Made with simple ingredients like linguine, shrimp, white wine, lemon, garlic, shallots, butter, olive oil, and red pepper flakes! This dish may only have a handful of ingredients, but sure does pack a punch of flavor! You are going to love this recipe!  

This is one of my favorite meals! Seriously, I could eat this on repeat! It’s fresh, flavorful, and beyond scrumptious! A winner if you ask me! Serve by itself or with a side salad and crusty bread! Weeknight dinners don’t having to be boring! 

Ingredients for the Best Shrimp Scampi

  • Linguine: I like to use linguine for this recipe; however, feel free to use angel hair or fettuccine. Really any pasta works! 
  • Shrimp: The recipe calls for 1lb raw, deveined shrimp. 
  • Olive Oil: You will need 1 tbsp good quality olive oil to cook the garlic and shallots.
  • Butter: The recipe calls for 4 tbsp butter, divided. You will use 2 tbsp to cook the garlic and shrimp. The remaining 2 tbsp will be added at the end to create a buttery sauce.
  • Garlic: Use 6 cloves of freshly minced garlic for the best flavor!
  • Shallot: The recipe calls for 1 medium sized shallot.
  • Red Pepper Flakes: I think 1/2 tsp adds the perfect amount of subtle heat; however, feel free to add more or omit completely if preferred.
  • White Wine: Use a dry wine like pinot grigio. 
  • Lemon: You will need the juice of 2 lemons. Use fresh lemon juice for the best flavor!
  • Parsley: Fresh parsley for serving!
  • Salt & Pepper: Season to taste!

Cooking the Shrimp

Shrimp cooks in a matter of minutes! Once the shrimp turns a light pink color remove from the pan. Overcooking the shrimp with make them rubbery! 

Making Shrimp Scampi

This Shrimp Scampi recipe could not be easier to make. Here are the steps:

  • Cook pasta according to box. Drain and set aside.
  • In a large pan, heat 1 tbsp olive oil and 2 tbsp butter over medium heat. Add in minced garlic, shallots, red pepper flakes, salt, and black pepper. Cook for 2 to 3 minutes or until the shallots start to turn translucent. 
  • Season shrimp with salt and pepper. Add shrimp to pan and cook for 3-4 minutes (or until shrimp turns light pink in color), turning halfway through. Remove shrimp from pan.
  • Add in white wine and simmer until it has been reduced by about half. About 3-5 minutes.
  • Add in the cooked shrimp, linguine, lemon juice, remaining 2 tbsp butter. Toss to coat. Season with salt and black pepper to taste.
  • Top with fresh parsley and enjoy!

  • 12oz linguine

Notes

  • Be careful not to overcook the shrimp! They cook in a matter of minutes!
