Peanut Butter Coconut Energy Balls

These are packed with oats, peanut butter, and flax seed making them the perfect afternoon pick-me-up.

  • 2 cups oats
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp flax meal
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips
  1. Pulse together all ingredients (except chocolate chips) in a food processor.
  2. Mix in chocolate chips.
  3. Roll in extra unsweetened shredded coconut.
  4. Store in the refrigerator for up to 1 week
