Peanut Butter Coconut Energy Balls

These are packed with oats, peanut butter, and flax seed making them the perfect afternoon pick-me-up.
- 2 cups oats
- 1/2 cup unsweetened shredded coconut
- 2 tbsp flax meal
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup natural peanut butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 cup mini chocolate chips
- Pulse together all ingredients (except chocolate chips) in a food processor.
- Mix in chocolate chips.
- Roll in extra unsweetened shredded coconut.
- Store in the refrigerator for up to 1 week
