Brussels Sprouts are definitely one of my top vegetables! I love them in all forms, but roasted brussels are by far my favorite! The crispy pieces that almost look burnt are where it’s at! It doesn’t get much better! The maple syrup in this recipe complements the slightly bitter and earthy flavor of the brussels. Trust me, if you think you don’t like brussels sprouts, this recipe will surely change that!
This recipe comes together with minimal time and ingredients, but is packed with flavor! First, preheat the oven to 425 degrees F.
Slice brussels sprouts into quarters and place on baking sheet. Drizzle olive oil and maple syrup on top. Add minced garlic, salt, and pepper. Toss together until the brussels are evenly and thoroughly coated.
Roast in the oven for 20-25 minutes, tossing halfway through.
Remove from oven and top with pomegranate seeds and goat cheese.

2 tbsp olive oil
3 tbsp maple syrup
2 cloves garlic, minced
1/4 cup pomegranate seeds
1/4 cup crumbled goat cheese
1/2 tsp salt
1/4 tsp black pepper
