Sweet and smoky Honey Lime Corn Salad made with sweet corn, jalapeno, lime, honey, and a robust spice blend makes the perfect fresh and flavorful side dish! This easy recipe comes together in no time and the whole family is sure to love it!

I have been making this recipe forever and it has always been a favorite! In fact, every couple months I get a phone call from my dad asking “What’s in that corn salad thing you make again”? I figured it was time for me to share the recipe with everyone! 

The recipe is super simple to make, but does not skimp on flavor! I love to serve this in a bowl with rice and chicken, alongside tacos, or even as an appetizer with tortilla chips! The options are endless!

Ingredients in Honey Lime Corn Salad

  • Corn: I prefer to use fresh corn that has been cooked in boiling water for 3 to 5 minutes. Grilled corn would also be delicious!
  • Black Beans: Use 1 15.5 oz black rinsed black beans.
  • Jalapeno: I remove the seeds; however, if you want prefer some extra heat do not remove.
  • Bell Pepper: I like to use orange bell pepper; however, feel free to use red or green.
  • Red Onion: The recipe calls for 1 medium-sized red onion.
  • Cilantro: I love the addition of cilantro, but it can be left out if preferred.
  • Lime: Use the juice of 2 limes.
  • Honey: The addition of 2 tablespoons honey adds the perfect sweetness to the salad.
  • Spices: The recipe uses a spice blend of chili powder, smoked paprika, garlic powder, and cumin.
  • Salt and Pepper: Used to season.

Cooking the Corn

Bring a large pot of water to a boil. Add in the corn and boil for 3 to 5 minutes or until the corn has softened slightly. You want to make sure that the corn still has a bite to it. Grilled corn would also be delicious in this recipe. 

Making Honey Lime Corn Salad

This Honey Lime Corn Salad recipe could not be easier to make. Here are the steps:

  • Bring a large pot of water to a boil. Add in the corn and boil for 3 to 5 minutes or until the corn has softened slightly. Remove from pot and allow to cool.
  • Using a sharp knife, remove kernels from corn. Place in a large bowl with the rinsed black beans, diced jalapeno, diced bell pepper, diced red onion, and cilantro. Add in lime juice, honey, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until fully combined.
  • Serve immediately or store in the refrigerator for up to 3 days.

  • 2 jalapenos, diced

  • 1 orange bell pepper, diced

  • 1 medium red onion, diced

  • 1/4 cup cilantro, chopped

  • 2 limes, juiced

  • 2 tbsp honey

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp cumin

  • 3/4 tsp salt

  • 1/4 tsp black pepper

Directions

  • Bring a large pot of water to a boil. Add in the corn and boil for 3 to 5 minutes or until the corn has softened slightly. Remove from pot and allow to cool.
