Healthier Pumpkin Waffles

These healthier pumpkin waffles are made with white whole wheat flour, pumpkin pie spice, cinnamon, and coconut sugar.

  • 1 cup pure pumpkin puree
  • 1 1/3 cup milk
  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 tbsp coconut sugar
  • 1 2/3 cup white whole wheat flour
  • 1 tsp pumpkin pie spice
  • 1 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp salt
  1. Heat waffle iron to medium heat.
  2. Whisk together pumpkin purée, milk, plain Greek yogurt, eggs, vanilla extract, and coconut sugar.
  3. Add in white whole wheat flour, baking powder, salt, cinnamon, and pumpkin pie spice. Whisk until just combined.
  4. Pour into greased waffle maker and cook until golden!
  5. Serve with butter and maple syrup.
  6. Store leftovers in the freezer.
