This Greek Pasta Salad is the perfect recipe for spring and summer! It is made with rotini, feta, kalamata olives, a mix of veggies, and tossed in a homemade Greek dressing. Super simple to make and packed with flavor!

Pasta salad is always a good weeknight dinner idea! This recipe comes together in less than 30 minutes! Prep at the beginning of the week to have ready for those busy nights! The Greek dressing comes together with pantry ingredients including olive oil, red wine vinegar, lemon, dijon, garlic, oregano, salt, and pepper! So fresh and flavorful!

Ingredients for Greek Pasta Salad

  • Rotini: I like to use rotini for this recipe; however, feel free to use ziti, penne, fusilli! Really any pasta works! 
  • Cucumber: Use 1 1/2 cup quartered cucumber. I like to use English cucumber.
  • Grape Tomatoes: Use 1 1/2 cup halved grape tomatoes.
  • Red Onion: The recipe calls for 3/4 cup chopped red onion.
  • Green Bell Pepper: Use 1 green bell pepper.
  • Kalamata Olives: 3/4 cup halved and pitted kalamata olives adds the perfect briny and salty flavor to the pasta salad.
  • Feta: 1 cup cubed feta cheese adds the perfect creaminess to the pasta salad.
  • Parsley: 1/4 cup chopped parsley adds the perfect freshness to the pasta salad.
For the Greek Dressing:
  • Olive Oil: Use 1/2 cup good quality olive oil. 
  • Red Wine Vinegar: 2 tbsp red wine vinegar adds the perfect acidity to the dressing.
  • Lemon: Juice of 1 lemons brightens the flavor of the dressing.
  • Dijon: 1 tsp dijon gives the dressing a slightly sharp and tangy flavor.
  • Garlic: Use freshly minced garlic for the best flavor.
  • Dried Oregano: 1 tsp dried oregano adds a slight peppery flavor the dressing.
  • Salt and Pepper: Used to season the dressing.

Making the Greek Dressing

Making homemade Greek dressing is so much better than bottled! All you need are a handful of ingredients that you likely already have in your pantry! To make the dressing, whisk together olive oil, red wine vinegar, lemon juice, dijon, garlic, dried oregano, salt, and pepper! Feel free to double recipe and have extra dressing ready to add to salads and wraps!

Making Greek Pasta Salad

This Greek Pasta Salad recipe could not be easier to make. Here are the steps:

  • Cook pasta according to box. Drain and rinse under cold water.
  • Add pasta, cucumber, grape tomatoes, red onion, green bell pepper, kalamata olives, feta, and parsley to a large bowl.
  • To make the dressing, whisk together olive oil, red wine vinegar, lemon juice, dijon, garlic, dried oregano, salt, and pepper until fully emulsified.
  • Pour dressing over pasta and toss until fully combined.
  • Serve immediately or chill in the refrigerator until ready to eat!

Ingredients

  • 1lb rotini pasta

  • 1 1/2 cup cucumber, sliced and quartered

  • 1 1/2 cup grape tomatoes, halved

  • 3/4 cup red onion, chopped

  • 1 green bell pepper, chopped

  • 3/4 cup kalamata olives, pitted and halved

  • 1 cup feta cheese, cubed

  • 1/4 cup fresh parsley, chopped

  • Greek Dressing
  • 1/2 cup olive oil

  • 2 tbsp red wine vinegar

  • Juice of 1 lemon

  • 1 tsp dijon

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • 3/4 tsp salt

  • 1/4 tsp pepper

Directions

  • Cook pasta according to box. Drain and rinse under cold water.
