This perfectly moist Glazed White Chocolate Raspberry Loaf is loaded with raspberries and white chocolate chips and is topped with a 2-ingredient glaze.

Ingredients

  • 1/2 cup oil

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 cup full-fat sour cream

  • 1 tsp vanilla extract

  • 1 3/4 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 cup fresh or frozen raspberries

  • 1 cup white chocolate chips

Directions

  • Preheat oven to 350 degrees. Grease and line a loaf pan with parchment paper. Set aside.
  • Using a stand mixer, beat together oil and sugar. Add in eggs, sour cream, and vanilla extract. Beat until fully combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Add dry ingredients to the mixer, leaving a few tablespoons of dry mixture aside to toss with raspberries. Beat until just combined. Stir in coated raspberries and the white chocolate chips.
  • Pour batter into prepared pan. Bake for 50 minutes to 1 hour.
  • Allow to cool for 15 minutes in pan before transferring to a wire rack to cool completely.
  • To make the glaze, whisk together powdered sugar and milk. Drizzle glaze over cooled loaf.
