This Glazed Lemon Blueberry Loaf is moist, full of fresh lemon flavor, and bursting with blueberries.

Ingredients

  • 1 cup granulated sugar

  • 3/4 cup oil

  • 3 eggs

  • 3/4 cup sour cream

  • 1/4 cup fresh lemon juice

  • 1 tsp lemon zest

  • 1 tsp vanilla extract

  • 1 3/4 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup fresh or frozen blueberries

  • Lemon Glaze
  • 1 cup powdered sugar

  • 2 tbsp fresh lemon juice

Directions

  • Preheat oven to 350 degrees. Grease a loaf pan. Set aside.
  • Using a stand mixer, beat together oil and sugar. Add in eggs, sour cream, vanilla extract, lemon juice, and lemon zest. Beat well.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Add dry ingredients to the mixer, leaving a few tablespoons of dry mixture aside to toss with blueberries. Beat until just combined. Stir in coated blueberries.
  • Pour batter into prepared pan. Bake for 45-50 minutes.
  • To make the glaze, whisk together powdered sugar and lemon juice. Pour glaze over cooled loaf.
  • Store at room temperature in an airtight container.
