Fall Harvest Salad with Thyme Vinaigrette

n The perfect salad made with roasted sweet potatoes, goat cheese, apples, walnuts, and topped with a light thyme vinaigrette.

  • 1 bag greens mixed greens, kale, spinach, cruciferous mix
  • 2 sweet potatoes cubed
  • 1 apple chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup crumbled goat cheese

Thyme Vinaigrette

  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 tsp ground Dijon mustard
  • 1 clove minced garlic
  • 1 tbsp fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  1. Preheat oven to 425.
  2. Chop sweet potatoes and spray with olive oil and season with salt, pepper, and a sprinkle of garlic powder. Roast for 35-40 min. Flip half way through.
  3. In a bowl, add greens, apple, walnuts, sweet potatoes, and goat cheese.
  4. To make the dressing, mix together olive oil, lemon juice, Dijon, garlic, fresh thyme, salt, and pepper.
  5. If serving right away, pour dressing over salad.
