Peanut butter and chocolate = a match made in heaven. These cookies are are perfectly sweet and salty.
- 3/4 cup unsalted butter room temperature
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar packed
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup chocolate chips
- 1/2 cup peanut butter
- Beat together butter and both sugars for 3-5 minutes until fluffy. Add in eggs, one at a time. Beat in vanilla extract.
- In a separate bowl, whisk together dry ingredients. Slowly incorporate into wet ingredients and beat until combined. Mix in chocolate chips.
- Cover and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350. Scoop about 1 tbsp of cookie dough and flatten into a disc. Spoon on a little peanut butter and top with another disc of cookie dough. Top with extra chocolate chips. Place on parchment lined baking sheet.
- Bake at 350 for 12-14 min.
- Store in an airtight container at room temperature for up to 5 days.
