Caramelized Onion and Mushroom Pizza

Try these new Caramelized Onion and Mushroom Pizzas for an easy weeknight dinner in 30 minutes or less! Store-bought flatbread, pizza crust, or pizza dough with a olive oil and garlic base topped with perfectly caramelized onions, mushrooms, salami, three cheese blend, balsamic glaze, and fresh basil. These pizzas will quickly become a favorite on the weekly rotation! 

I have been making these pizzas for years! Whenever I am short on time and need to whip up something quick this was always the move. I love making pizzas because there is never a shortage of flavor combinations! I love making classic pepperoni pizzas, peach and mozzarella pizzas, and pesto based pizzas! However, these Caramelized Onion and Mushroom Pizzas are definitely at the top of my list! The caramelized onions and mushrooms are so simple to make and add the perfect sweet and robust flavor!

Ingredients for these Caramelized Onion and Mushroom Pizzas

  • Store-bought flatbread, pizza crust, or pizza dough: I like to use Trader Joe’s pre-made pizza crust or Stonefire naan.
  • Olive Oil: Used to drizzle on the flatbread and to caramelize the onions and mushrooms
  • Butter: 1 tablespoon used to caramelize the onions and mushrooms.
  • Light Brown Sugar: 1 tablespoon used to help caramelize the onions and mushrooms.
  • Salt: Used to season the onions and mushrooms.
  • Garlic: Use 6 cloves minced fresh garlic.
  • Yellow Onion: The recipe calls for 1 large yellow onion.
  • Mushrooms: I like to use Baby Bella mushrooms for this recipe; however, white button mushrooms would also work.
  • Shredded Cheese: Use a blend of shredded mozzarella, gruyere, and swiss.
  • Salami: The recipe uses about 3oz sliced salami.
  • Balsamic Glaze: Used to drizzle on the pizzas right before baking.
  • Fresh Basil: Top pizzas with fresh basil after baking.

Caramelizing the Onions and Mushrooms

Caramelizing the onions and mushrooms could not be easier and they add the perfect sweet flavor to the pizzas. First, add sliced mushrooms to dry pan over medium-low heat. Cook for 3-5 minutes or until the water has been completely evaporated from the mushrooms. Once evaporated, add in the sliced onions, olive oil, butter, brown sugar, and salt. Mix together until mushrooms and onions are fully coated. Continue to cook over medium-low heat for about 10 minutes or until the onions have softened and have turned a rich brown color. Don’t be tempted to raise the heat above medium-low. It is important to slowly caramelize to prevent charring the onions or mushrooms. 

Assembling Caramelized Onion and Mushroom Pizzas

  • Preheat oven to 425 degrees F (or according to the flatbread, pizza crust, or pizza dough package).
  • Slice mushrooms and add to a dry pan over medium-low heat. Cook for 3-5 minutes or until the water has been completely evaporated from the mushrooms. 
  • Once evaporated, add in the sliced onions, olive oil, butter, brown sugar, and salt. Mix together until mushrooms and onions are fully coated. Continue to cook over medium-low heat for about 10 minutes or until the onions have softened and have turned a rich brown color. Remove from heat.
  • Drizzle pizza crusts with olive oil and then top with minced garlic.
  • Sprinkle pizzas with the cheese blend. Next, add the salami. Top with caramelized onions and mushrooms. Drizzle each pizza with balsamic glaze.
  • Bake for 10 minutes or until cheese is melted.
  • Top each pizza with fresh basil. Slice and enjoy!

Ingredients

  • 2 Flatbread, pizza crust, or pizza dough

  • 6 cloves garlic, minced

  • 3 cups mix of shredded mozzarella, gruyere, and swiss

  • 3oz salami

  • 2-3 tbsp balsamic glaze

  • Fresh Basil

  • 1 large yellow onion,

  • 1 cup Baby Bella mushrooms, sliced

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tbsp light brown sugar

  • 1/2 tsp salt

Directions

  • Preheat oven to 425 degrees F (or according to the flatbread, pizza crust, or pizza dough package).
  • Slice mushrooms and add to a dry pan over medium-low heat. Cook for 3-5 minutes or until the water has been completely evaporated from the mushrooms.
  • Once evaporated, add in the sliced onions, olive oil, butter, brown sugar, and salt. Mix together until mushrooms and onions are fully coated. Continue to cook over medium-low heat for about 10 minutes or until the onions have softened and have turned a rich brown color. Remove from heat.
  • Drizzle pizza crusts with olive oil and then top with minced garlic.
  • Sprinkle pizzas with the cheese blend. Next, add the salami. Top with caramelized onions and mushrooms. Drizzle each pizza with balsamic glaze.
  • Bake for 10 minutes or until cheese is melted and edges have turned a light golden brown.
  • Top each pizza with fresh basil. Slice and enjoy!
