Buffalo Chicken Sandwiches

These new Buffalo Chicken Sandwiches are going to easily become your new favorite gameday recipe! They are made with only a handful of pantry ingredients and come together in less than 30 minutes! I mean how can you go wrong with shredded rotisserie chicken tossed in buffalo sauce topped with a tangy slaw, melted provolone, and served on a toasted ciabatta roll!? Serve with a side of veggies or fries for an easy weeknight dinner or serve at your next gameday party!

Make these 30 Minute Buffalo Chicken Sandwiches that your party guests are sure to love! They come together in no time and can even be prepped the day before!

Ingredients for these Buffalo Chicken Sandwiches

Chicken Sandwiches:

  • Rotisserie Chicken: Use 1 store-bought rotisserie chicken. I remove the skin and then shred using a stand mixer.
  • Buffalo Sauce: Use your favorite buffalo sauce.
  • Olive Oil: Drizzle olive on the ciabatta rolls before placing in broiler.

Coleslaw:

  • Slaw Mix: Use 6 cups shredded green cabbage, red cabbage, and carrot blend.
  • Mayo: Use light or full-fat mayo.
  • Dijon: 1 tablespoon Dijon gives the slaw a tangy flavor.
  • White Vinegar: Use 2 tablespoons white vinegar.
  • Honey: Honey adds the perfect touch of sweetness.
  • Garlic Powder: Use 1/2 tsp garlic powder.
  • Salt: Use 3/4 teaspoon salt.
  • Black Pepper: Use 1/2 tsp ground black pepper.
Toppings and Extras:
  • Provolone Cheese: I prefer provolone cheese for tis recipe; however, Havarti, blue cheese, or mozzarella would also be delicious!
  • Ciabatta Rolls
 

Shredding the Chicken

I like to use my stand mixer to shred the chicken! It makes it super simple and quick! If you don’t have a stand mixer on hand, you can also use a hand mixer or 2 forks. 

Assembling the Buffalo Chicken Sandwiches

This Buffalo Chicken Sandwich recipe could not be easier to make. Here are the steps:

  • Add the slaw mix to a large bowl. In a separate small bowl, combine mayo, Dijon, white vinegar, hoeny, garlic powder, salt, and pepper. Pour over slaw mix and set mix until fully combined. Set aside.
  • Place rotisserie chicken in the bowl of a stand mixer. Beat the chicken until shredded. Pour buffalo sauce over shredded chicken and toss until fully coated.
  • Slice ciabatta rolls and place on baking sheet. Drizzle with olive oil. Add a generous spoonful of buffalo chicken onto each roll. Top with provolone cheese.
  • Broil in oven for 3-5 minutes or until bubbly and ciabatta rolls are evenly toasted. 
  • Top each sandwich with a spoonful of the coleslaw.
  • Serve warm!

Ingredients

  • Buffalo Chicken
  • 1 rotisserie chicken

  • 1 cup buffalo sauce

  • Coleslaw
  • 6 cups slaw mix

  • 3/4 cup mayo

  • 1 tbsp Dijon

  • 2 tbsp white vinegar

  • 2 tbsp honey

  • 1/2 tsp garlic powder

  • 3/4 tsp salt

  • 1/2 tsp black pepper

  • Toppings & Extras
  • 6 Ciabatta Rolls

  • 6 Provolone Cheese

  • Olive oil

Directions

  • Turn the oven broiler on.
  • Add slaw mix to a large bowl. In a separate bowl, mix together mayo, Dijon, white vinegar, honey, garlic powder, salt, and pepper until fully combined. Pour over slaw mix and toss until fully combined. Set aside.
  • Add rotisserie chicken to the bowl of a stand. Beat until shredded. Alternately, use 2 forks to shred. Pour buffalo sauce over shredded chicken and toss together until fully coated.
  • Slice and place ciabatta rolls on a baking sheet. Drizzle with olive oil. Scoop buffalo chicken evenly onto each roll. Top with provolone cheese. Place in broiler for 3-5 minutes until bubbly and ciabatta rolls are evenly toasted.
  • Remove from broiler. Top each sandwich with the coleslaw. Serve warm!

Notes

  • This recipe can be made ahead of time. Simply store buffalo chicken and coleslaw in an airtight container in the fridge and assemble and broil when ready!
