Brownie Cookies

Fudgy. Chocolatey. Rich.

  • 3/4 cup unsalted butter room temperature
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 2 large eggs
  • 1 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cup chocolate chips
  1. Cream together butter, sugar, and light brown sugar for 3 minutes until light and fluffy. Add in eggs, one at a time. Beat in vanilla extract.
  2. In a separate bowl, sift together flour, unsweetened cocoa powder, baking soda, and salt. Slowly add to wet ingredients and beat until fully combined.
  3. Mix in chocolate chips. cover and chill dough in the refrigerator for at least 30 minutes!
  4. Preheat oven to 350 degrees F.
  5. Scoop onto nonstick pans or parchment paper and bake for 10-12 minutes.
  6. Cool slightly, then transfer to wire racks to cool completely.
  7. Store at room temperature in an airtight container for up to 1 week.
