Apple Cinnamon Muffins

I know it’s not fall, but you can never go wrong with an Apple Cinnamon Muffin! These Apple Cinnamon Muffins are packed with cinnamon, nutmeg, clove, and diced apples giving them the most wonderful flavor! They are heavily sprinkled with course sugar prior to baking, which gives a nice sweet and crunchy topping. Oh, so irresistible! They are sure to become your favorite year-round staple.

No mixer is required, which makes these muffins super easy to make! I don’t know about you, but sometimes I just want a quick recipe that requires minimal effort and cleanup!

What Ingredients Do I Need?

Oil: canola oil works wonderfully

Eggs: large, room temperature

Greek Yogurt: plain

Milk: any type of regular milk

Vanilla Extract: pure vanilla, DO NOT use imitation

Flour: use all-purpose flour

Sugar: granulated white sugar

Baking Powder and Baking Soda: leavening agents!

Cinnamon, Nutmeg, and Clove: gives the muffins the perfect warm flavor

Salt: balances and enhances the flavor of the muffins

Apples: any type of apple works, but I love using Hunnyz, Honey Crisp, McIntosh, and Gala

Tips for the BEST Muffins:

  • Do not overmix batter!
  • Dice the apples pretty small, so the muffin to apple ratio is PERFECT!
  • Be generous with the turbinado sugar!
  • Fill muffin tins about 3/4 full.
  • Transfer to a wire rack to cool.

  • 1/2 cup oil
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp clove
  • 1 large apple peeled, diced
  • Course sugar for topping
  1. Preheat oven to 375 degrees. Line muffin tin with liners. Set aside.
  2. In a large bowl, whisk together oil, eggs, Greek yogurt, milk, and vanilla extract until fully combined.
  3. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and clove. Pour dry ingredients into wet ingredients and stir until just combined.
  4. Gently fold in peeled and diced apple.
  5. Scoop into prepared muffin tin about 3/4 of the way full. Top with course sugar. Bake for 18-20 minutes.
