I could do Mexican food everyday. Never I have I ever said no to chips and salsa! This Adobo Lime Chicken Fajita recipe comes together using one bowl and one sheet pan! It makes for the perfect meal on a busy weeknight! 

Ingredients for Adobo Lime Sheet Pan Chicken Fajitas

  • Chicken: The recipe uses 2 lbs skinless chicken breast.
  • Bell Peppers: I like to use a mix of colors!
  • Yellow Onion: Use 1 medium yellow onion.
  • Olive Oil: Use a good quality olive oil.
  • Chipotle Peppers in Adobo Sauce: Use 2 tbsp canned adobo sauce.
  • Honey: 2 tbsp honey gives the chicken a slightly sweet flavor to balance out the smokiness. It also helps give the chicken, peppers, and onions a slight char.
  • Lime Juice: Use the juice of 1 lime. Use freshly pressed lime juice for the best flavor!
  • Garlic: Use 3 cloves freshly minced garlic for the best flavor.
  • Paprika: Adds the perfect sweet and smoky flavor.
  • Chili Powder: Gives the fajitas a slight kick.
  • Cumin: 1 teaspoon gives the fajitas a slight sweet and nutty flavor.
  • Onion Powder: Adds a slightly sharp and zesty flavor to the fajitas.
  • Salt: Use 1 full teaspoon
  • Black Pepper:  The recipe calls for 1/2 teaspoon ground black pepper.
Toppings and Extras:
  • Avocado or Guacamole: Use this recipe for the best guacamole.
  • Cheese: I like to use a cheddar blend.
  • Sour Cream
  • Salsa
  • Tortillas: I like to warm flour or corn tortillas on the stove with a drizzle of olive oil.

This spice blend packs the best flavor! It gives the fajitas a smoky, warm, and slightly sweet flavor! In a small bowl, combine the cumin, paprika, chili powder, onion powder, salt, and black pepper.

How to make Adobo Lime Sheet Pan Chicken Fajitas

This Adobo Lime Sheet Pan Chicken Fajita recipe could not be easier to make. Here are the steps:

  • Preheat oven to 425 degrees F.
  • Slice chicken breasts into thin strips and place in a bowl. Add in thinly sliced bell peppers and onion.
  • Make the spice blend by combining the cumin, paprika, chili powder, onion powder, salt, and black pepper.
  • To the bowl, add the olive oil, adobo sauce, honey, lime juice, and spice blend. Toss together until fully coated.
  • Spread chicken, bell pepper, and onion mixture into a single layer on a sheet pan. 
  • Bake for 18-20 minutes. Turn on broiler and broil for 3 minutes or until the internal temperature of the chicken reaches 165 degrees F and chars slightly.
  • To warm the tortillas, drizzle a tsp of olive oil into a pan over high heat. Place tortillas in pan and warm until golden and slightly charred, making sure to flip.
  • Assemble with your favorite toppings like guacamole, cheese, sour cream, and salsa!
