Brussels Sprouts are definitely one of my top vegetables! I love them in all forms, but roasted brussels are by far my favorite! The crispy pieces that almost look burnt are where it’s at! It doesn’t get much better! The maple syrup in this recipe complements the slightly bitter and earthy flavor of the brussels. Trust me, if you think you don’t like brussels sprouts, this recipe will surely change that!

Ingredients for Maple Brussels Sprouts with Pomegranate and Goat Cheese

  • Brussels Sprouts: The recipe calls for one pound brussels sprouts. I like to cut them into at least 4 quarters. I prefer smaller pieces so they get extra crispy in the oven!
  • Olive Oil: Used to coat the brussels sprouts.
  • Maple Syrup: 3 tablespoons maple syrup gives the brussels a slightly sweet flavor! Also, the sugar helps to caramelize the brussels!
  • Garlic: Use 2 cloves freshly minced garlic for the best flavor.
  • Pomegranate Seeds: The pomegranate seeds add the perfect color and tartness to counterbalance the sweetness of the brussels.
  • Goat Cheese: Adds a level of creaminess to the brussels.
  • Salt and Pepper: Used to season the brussels.

Making Maple Brussels Sprouts with Pomegranate and Goat Cheese

This recipe comes together with minimal time and ingredients, but is packed with flavor! First, preheat the oven to 425 degrees F. 

Slice brussels sprouts into quarters and place on baking sheet. Drizzle olive oil and maple syrup on top. Add minced garlic, salt, and pepper. Toss together until the brussels are evenly and thoroughly coated.

Roast in the oven for 20-25 minutes, tossing halfway through.

Remove from oven and top with pomegranate seeds and goat cheese.
