Greek Chicken Meatball Bowls

Say hello to these new Greek Chicken Meatball Bowls! They come together in 30 minutes or less and will easily become a new family favorite and a staple on the weekly rotation! The Greek chicken meatballs are made with red onion, creamy feta, a mix of dried herbs, fresh garlic. They are packed with all the flavors you love!

These Greek Chicken Meatball Bowls make part two of my new series: 30 Minute Weeknight Meals. This recipe is one of my all-time favorites! It is fresh, vibrant, and the perfect healthy dinner. 

Ingredients for these Greek Chicken Meatball Bowls

Greek Chicken Meatballs:

  • Ground Chicken: I use 93% lean ground chicken for this recipe.
  • Olive Oil: A couple tablespoons to cook the meatballs.
  • Bread Crumbs: Use plain bread crumbs.
  • Egg: The recipe uses 1 large egg.
  • Red Onion: Use 1/2 cup freshly diced red onion.
  • Feta: Use full-fat feta.
  • Garlic: The recipe uses 2 cloves freshly minced garlic.
  • Dried Parsley: 2 teaspoons dried parsley
  • Dried Oregano: 1/2 tsp dried oregano.
  • Cumin: 1/2 teaspoon gives the tacos a slight sweet and nutty flavor.
  • Salt: Use 1 full teaspoon.
  • Black Pepper:  The recipe calls for 1/2 teaspoon ground black pepper.

Cucumber Salad:

  • Cucumber: Use 2 cups fresh cucumber.
  • Tomatoes: I like to use halved cherry tomatoes.
  • Red Onion: Use 1/2 cup diced red onion for this recipe.
  • Olive Oil: 2 tablespoons good quality olive oil.
  • Red Wine Vinegar: 1 tablespoon used to make the simple dressing.
  • Salt & Pepper: To taste.
Toppings & Extras:
  • Rice: I like to use jasmine or basmati rice.
  • Tzatziki: Homemade tzatziki is best or you can use this whipped feta dip recipe!
  • Feta: Add extra crumbled feta on top.
 

Making the Greek Chicken Meatballs

All you need is one bowl to make these Greek Chicken Meatballs. Here are the steps:

  • In a large bowl combine ground chicken, egg, bread crumbs, crumbled feta, diced red onion, minced garlic, dried parsley, dried oregano, cumin, salt, and pepper. Mix until fully combined.
  • Use a small cookie scoop to form into balls.
  • Heat 2-3 tablespoons olive oil over medium heat. Add meatballs to pan and cook for 8-10 minutes, making sure to flip several times to brown evenly. Remove from pan.

Assembling Greek Chicken Meatball Bowls

These Greek Chicken Meatball Bowls are made in less than 30 minutes and could not be more versatile. For an easy weeknight dinner, add rice to a bowl, add cucumber tomato salad, meatballs, tzatziki, and crumbled feta. So simple and so delicious! If you have leftovers, you can switch things up and make Greek chicken meatball pitas!

Greek chicken meatball bowls made with Greek meatballs, fresh cucumber tomato salad over rice and topped with tzatziki and feta.

Ingredients

  • Greek Chicken Meatballs
  • 1 lb ground chicken

  • 1 large egg

  • 1/2 cup plain bread crumbs

  • 1/2 cup crumbled feta

  • 1/2 cup diced red onion

  • 2 cloves minced garlic

  • 2 tsp dried parsley

  • 1/2 tsp dried oregano

  • 1/4 tsp cumin

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Cucumber Tomato Salad
  • 2 cups chopped cucumber

  • 1 cup halved cherry tomatoes

  • 1/2 cup diced red onion

  • 2 tbsp olive oil

  • 1 tbsp red wine vinegar

  • salt and pepper to taste

  • Toppings & Extras
  • Cooked basmati or jasmine rice

  • Tzatziki

  • Feta

Directions

  • In a large bowl combine ground chicken, egg, bread crumbs, crumbled feta, diced red onion, minced garlic, dried parsley, dried oregano, cumin, salt, and pepper. Mix until fully combined.
  • Use a small cookie scoop to form into balls.
  • Heat 2-3 tablespoons olive oil over medium heat. Add meatballs to pan and cook for 8-10 minutes, making sure to flip several times to brown evenly. Remove from pan.
  • To make the cucumber tomato salad, add chopped cucumber, halved cherry tomatoes, and diced red onion to a large bowl. In a sperate bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Add to bowl and toss until fully combined.
  • To assemble, place rice in bowl, add tomato cucumber salad, meatballs and top with tzatziki and feta.
