I don’t know about you, but tacos are always a good idea! Not only are these Chicken Tacos absolutely delicious, they are beyond easier to make. You are going to love this recipe! 

Ingredients for these Chicken Tacos with Jalapeno Pineapple Salsa

Chicken Tacos:

  • Chicken: The recipe uses 1lb skinless chicken breast.
  • Olive Oil: A couple tablespoons to cook the chicken.
  • Smoked Paprika: Adds the perfect smokiness to the tacos.
  • Chili Powder: Gives the tacos a slight kick.
  • Cayenne Pepper: A pinch of cayenne gives the tacos a dash of heat. Can omit if needed.
  • Garlic Powder:  Use 1 teaspoon.
  • Cumin: 1/2 teaspoon gives the tacos a slight sweet and nutty flavor.
  • Salt: Use 1 full teaspoon
  • Black Pepper:  The recipe calls for 1/2 teaspoon ground black pepper.

Jalapeno Salsa:

  • Pineapple: Use 3 cups fresh pineapple.
  • Jalapeno: The recipe uses 1 jalapeno. If heat is preferred include the seeds, otherwise use a spoon to scrape out the jalapeno seeds.
  • Red Onion: Use 1 cup diced red onion for this recipe.
  • Cilantro: The recipe uses 1/4 cup chopped fresh cilantro.
  • Lime: You will need 1/4 cup freshly lime juice, which is about 1-2 limes.
  • Salt: Use 1/2 tsp salt
  • Black Pepper: Use 1/4 tsp ground black pepper.
Toppings:
  • Guacamole: Use this recipe for the best guacamole.
  • Cotija Cheese: Crumbled cotija cheese adds the perfect saltiness and creaminess to the tacos.
  • Tortillas: I like to warm flour or corn tortillas on the stove with a drizzle of olive oil.
 

Making the Spice Blend

This spice blend packs the best flavor! It gives the chicken a smoky, warm, and slightly sweet flavor! Feel free to double, triple, or quadruple the recipe and store in a jar for future use! In a small bowl, combine the smoked paprika, chili powder, cayenne (optional), garlic powder, cumin, salt, and black pepper. Toss the spice blend with the chicken. 

Assembling Chicken Tacos with Jalapeno Pineapple Salsa

This Chicken Taco with Jalapeno Salsa recipe could not be easier to make. Here are the steps:

  • Slice chicken breasts into thin strips and place in a bowl. Set aside.
  • Make the spice blend by combining the smoked paprika, chili powder, cayenne (omit if needed), garlic powder, cumin, salt, and black pepper.
  • Toss spice blend with the chicken until fully coated.
  • Heat 2 tbsp olive oil over medium-high heat.
  • Add chicken to pan and cook for 5-7 minutes or until internal temperature reached 165 degrees F. 
  • To make the jalapeno pineapple salsa, cut fresh pineapple into small cubes. Next, slice jalapeno in half length-wise and remove the seeds using a spoon (feel free to keep seeds if you want it spicy!). Add diced jalapeno, red onion, and chopped cilantro to the pineapple.
  • In a small bowl, juice 1-2 limes. Add in 1 tsp honey, 1/2 tsp salt, and 1/4 tsp ground black pepper. Whisk until fully combined. Pour over pineapple mixture and toss until combined.
  • To warm the tortillas, drizzle a tsp of olive oil into a pan over high heat. Place tortillas in pan and warm until golden and slightly charred, making sure to flip.
  • To assemble the tacos, spoon guacamole onto the bottom of the tortilla. Add the chicken next and then the jalapeno pineapple salsa. Top with cotija cheese and enjoy!

Notes

  • Omit jalapeno seeds and cayenne pepper if you don't want extra heat.
