Fall Harvest Salad with Thyme Vinaigrette
nn The perfect salad made with roasted sweet potatoes, goat cheese, apples, walnuts, and topped with a light thyme vinaigrette.

n - 1 bag greens mixed greens, kale, spinach, cruciferous mix
- 2 sweet potatoes cubed
- 1 apple chopped
- 1/2 cup walnuts chopped
- 1/2 cup crumbled goat cheese
Thyme Vinaigrette
- 1/4 cup olive oil
- Juice of 1 lemon
- 2 tsp ground Dijon mustard
- 1 clove minced garlic
- 1 tbsp fresh thyme
- 1/2 tsp salt
- 1/4 tsp black pepper

n - Preheat oven to 425.
- Chop sweet potatoes and spray with olive oil and season with salt, pepper, and a sprinkle of garlic powder. Roast for 35-40 min. Flip half way through.
- In a bowl, add greens, apple, walnuts, sweet potatoes, and goat cheese.
- To make the dressing, mix together olive oil, lemon juice, Dijon, garlic, fresh thyme, salt, and pepper.
- If serving right away, pour dressing over salad.
