Healthier Pumpkin Waffles
These healthier pumpkin waffles are made with white whole wheat flour, pumpkin pie spice, cinnamon, and coconut sugar.
- 1 cup pure pumpkin puree
- 1 1/3 cup milk
- 1/2 cup plain Greek yogurt
- 2 large eggs
- 2 tsp vanilla extract
- 3 tbsp coconut sugar
- 1 2/3 cup white whole wheat flour
- 1 tsp pumpkin pie spice
- 1 1/2 tsp cinnamon
- 2 tsp baking powder
- 1/2 tsp salt
- Heat waffle iron to medium heat.
- Whisk together pumpkin purée, milk, plain Greek yogurt, eggs, vanilla extract, and coconut sugar.
- Add in white whole wheat flour, baking powder, salt, cinnamon, and pumpkin pie spice. Whisk until just combined.
- Pour into greased waffle maker and cook until golden!
- Serve with butter and maple syrup.
- Store leftovers in the freezer.
