The Best Greek Salad
Greek salad made with feta, pepperoncini, and fresh tomatoes and topped with a classic Greek dressing.
- 1 package green leaf lettuce
- 1 yellow bell pepper sliced
- 1/4 red onion sliced
- 1/2 cup feta cubed
- 1/4 cup sliced pepperoncini
- 2 roma tomatoes sliced
Greek Dressing
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- Zest and juice of 1/2 lemon
- 1 1/2 tsp Dijon mustard
- 2 cloves garlic minced
- 1 tbsp feta finely chopped
- 1 1/2 tsp za’atar
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- Combine all ingredients in a large bowl.
- To make the Greek dressing, whisk together all of the ingredients until fully combined.
- Pour dressing over salad.
