Ingredients for this Glazed Lemon Loaf

Lemon Loaf:

  • Granulated Sugar: This recipe calls for regular white granulated sugar.
  • Lemon: Use fresh lemon juice and lemon zest for the best flavor!
  • Oil: Use a neutral oil like canola or vegetable oil for the perfectly moist cake.
  • Eggs: The recipe calls for large room temperature eggs.
  • Sour Cream: Make sure to use full-fat room temperature sour cream.
  • Vanilla Extract: Do not use imitation vanilla. Use pure vanilla extract. 
  • All-Purpose Flour: Make sure to use the spoon-and-level method to ensure the proper amount of flour is measured. Adding too much flour with lead to a dry loaf.
  • Baking Powder & Baking Soda: Leaving agents used together for the perfect rise and texture.
  • Salt: Balances the flavor of the loaf.

Lemon Glaze:

  • Powdered Sugar: Make sure there are no lumps. Sift if needed.
  • Lemon Juice: Use freshly squeezed lemon juice for the best flavor.

Tips for the Best Glazed Lemon Loaf

  • Use room temperature eggs and sour cream. Doing so, ensures that the ingredients are mixed together properly and result in a smooth batter. 
  • Use fresh lemon juice and lemon zest.
  • Do not overmix batter once the dry ingredients are added to the wet ingredients. Overmixing will lead to a denser loaf.

How to Make Glazed Lemon Loaf

 

  • Preheat oven to 350 degrees F. Spray and line a standard loaf pan with parchment paper. Set aside.
  • In the bowl of a stand mixer, beat together granulated sugar and oil until fully combined. 
  • Add in eggs, sour cream, and vanilla extract, lemon juice, and lemon zest. Beat until fully blended. 
  • In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Add to wet ingredients and beat until just combined.
  • Pour into prepared loaf pan. Bake for 45-50 minutes. Allow to cool for 10 minutes before transferring to a wire rack to cool completely.
  • To make the lemon glaze, whisk together powdered sugar and lemon juice. If needed, add additional lemon juice until desired consistency is reached. 
  • Drizzle lemon glaze over cooled loaf. Slice and enjoy!

  • 1 cup granulated sugar

  • 1/2 cup oil

  • 3 large eggs, room temperature

  • 3/4 cup sour cream, room temperature

  • 1 tsp vanilla extract

  • 1/4 cup fresh lemon juice

  • 1 tsp lemon zest

  • 1 3/4 cup all-purpose flour, measured using the spoon and level method

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • Lemon Glaze
  • 1 cup powdered sugar

  • 2 tbsp fresh lemon juice

Directions

  • Preheat oven to 350 degrees F. Grease a loaf pan. Set aside.
  • Using a stand mixer, beat together oil and granulated sugar until fully combined. Add in eggs, sour cream, vanilla extract, lemon juice, and lemon zest. Beat well.
  • In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt. Add dry ingredients to wet ingredients and beat until just combined.
  • Pour into prepared loaf pan. Bake for 45-50 minutes.
  • To make the glaze, whisk together powdered sugar and lemon juice. Pour over cooled loaf.
  • Store at room temperature for up to 5 days.
