These Cadbury Egg Cookies are made using one of my classic chocolate chip cookie dough recipes! All I did was crush up some Cadbury eggs and mix them in! They have a chewy center, crispy edges, and pools of melted chocolate.
Easter is fast approaching, so I figured it was time to start baking with Cadbury Mini Eggs! The best holiday candy if you ask me! The creamy milk chocolate inside and crispy sugar shell is just absolute perfection. They truly melt in your mouth.
All you need are a handful of simple pantry ingredients to make these Cadbury Egg Cookies!Â
This recipe only requires 30 minutes of chilling time! Allowing the cookie dough to chill for half hour allows the butter to solidify ensuring that the cookies do not spread too much in the oven! Also, chilling the cookie dough deepens the flavor of the cookies! If needed, you can chill the cookie dough overnight or up to 48 hours. This makes this recipe the perfect make ahead dessert!

1 cup unsalted butter, room temperature
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
2 cups all-purpose flour, measured using the spoon-and-level method
1 1/2 tsp baking soda
1 tsp salt
1 cup Cadbury mini eggs, chopped (plus additional for topping each cookie)
1 cup chocolate chips (plus additional for topping each cookie)
