Brownie Cookies
Fudgy. Chocolatey. Rich.
- 3/4 cup unsalted butter room temperature
- 1/2 cup granulated sugar
- 3/4 cup light brown sugar packed
- 2 large eggs
- 1 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 1/2 cup chocolate chips
- Cream together butter, sugar, and light brown sugar for 3 minutes until light and fluffy. Add in eggs, one at a time. Beat in vanilla extract.
- In a separate bowl, sift together flour, unsweetened cocoa powder, baking soda, and salt. Slowly add to wet ingredients and beat until fully combined.
- Mix in chocolate chips. cover and chill dough in the refrigerator for at least 30 minutes!
- Preheat oven to 350 degrees F.
- Scoop onto nonstick pans or parchment paper and bake for 10-12 minutes.
- Cool slightly, then transfer to wire racks to cool completely.
- Store at room temperature in an airtight container for up to 1 week.
