Simple Cucumber Salad

Ingredients
2 cucumbers
4 small tomatoes
1/2 red onion
- Simple Dressing
2 tbsp olive oil
1 tbsp fresh dill
1 tbsp red wine vinegar
1/2 tsp garlic powder
1 tsp kosher salt
1/4 tsp black pepper
Directions
- Peel the cucumbers and cut in half length wise. Use a spoon to scrape out the seeds. Slice the cucumbers and tomatoes. Thinly slice the red onion. Add to a large bowl.
- To make the dressing combine the olive oil, red wine vinegar, fresh dill, garlic powder, kosher salt, and black pepper.
- Pour dressing over veggies and mix well.
- Store in the refrigerator.
Notes
- Best served cold.
